Ingredients:
1/2 C finely chopped carrot ( 1 med)
1/2 C finely chopped onion (1 med)
1/2 C finely chopped celery (1 stalk)
1T butter
4 C chicken broth
3/4C wild rice, rinsed & drained
12 oz boneless, skinless chicken breast cut into 3/4in pieces
2T flour
2T butter
2C half and half
S & P
Directions:
In a large saucepan cook and stir carrot, onion & celery in 1T butter for 4-6 min until tender.
Add broth & rice. Cover & simmer for 30 min.
Add chicken. Cover & simmer another 20 -25 minutes.
In a small bowl comine flour and 2T butter to make a paste. Stir flour mixture into rice mixture.
Cook & stir until thick and bubbly then cook 1 min. more.
Add half and half. Cook & stir over medium heat until heated through. Season with S & P.
