Mexcian Wedding Cookies/ Pecan Sandies (GF)

Ingredients:
1 cup butter
1/2 cup powdered sugar
2 tsp vanilla
1 cup raw walnuts or pecans finely chopped
1 3/4 cup GF Flour blend
1 tsp xantham
1/2 tsp salt

Directions:
Preheat oven to 300. Line a sheet with parchment paper.
Cream butter and sugar together in a mixer add vanilla and nuts and combine.
Mix dry ingredients together, then add to mixer. Blend until a ball forms.
Scoop 1 tablespoon dough and roll into a small ball or crescent moon shape.
Place on cookie sheet. Bake 30-35 minutes. Remove and let rest 5 minutes. Roll in a bowl of confectioners sugar to coat.
