Mashed Potato-Meat Loaf Casserole

Ingredients:
Potato filling:
2lbs. baking potato (4 large), peeled and cut into 1" chunks
1/2c sour cream
1T unsalted butter
1/2 tsp salt
1/8 tsp pepper
1 egg
1/4 c chopped fresh basil, or parsley
1T sesame seeds

Meat loaf shell:
1T olive/vegetable oil
2 onions, chopped
1 garlic clove, minced
1 tsp dried oregano, crumbled
1/2 tsp dried basil, crumbled
1 lb. ground beef (or meatloaf mix of beef and pork)
2 eggs
1/2 c plain dry breadcrumbs
1/2c tomato sauce
1/4c chopped parsley or basil
1/4c dry white wine
1T cider vinegar or fresh lemon juice
1tsp salt
1/4tsp pepper
Directions:
Place potatoes in large pot of salted water. Bring to a boil over high heat; reduce heat, partially cover, and simmer 15-20min until tender.
Meanwhile, start meat loaf shell. Heat oven to 350. Grease shallow 2qt casserole. In med skillet, saute onions in oil 5min over med heat.
Add garlic, oregano, and dried basil; cook 1min. Spoon into large bowl and cool about 10min.
Crumble meat into oninon mix. Add eggs, breadcrumbs, tomato sauce, fresh basil, wine, vinegar, salt, and pepper. Mix just until thoroughly combined. Place in casserole, and press over bottom and up sides to make a shell.
Drain potatoes well. Place in med bowl and beat in sour cream, butter, salt, and pepper.
Add egg and beat until fluffy. Beat in basil. Fill center of shell with mashed potatoes; sprinkle with sesame seeds. Bake 50-60min until potatoes puff and are lightly browned. Let stand at least 15min before serving. Makes 6 servings.
