These Grain Free Nuggets are made with ground turkey instead of chicken, though chicken works too! Giving up fast food was a struggle so I started developing recipes for our fast food favorites. I substitute healthier ingredients that meet our dietary restrictions. This keeps me from feeling like I’m being deprived and helps me stay on track!

Grain-Free “Chicken Nuggets”
Serves 4
INGREDIENTS
1 lb. Organic Ground Turkey or Chicken
1/2 cup Coconut Flour
3 tbsp Arrowroot Powder
1 tsp Sea Salt
1/2 tsp Ground Mustard
1/2 tsp Pepper
1 Egg
1 tbsp Coconut Milk
, from a can or a carton
Coconut oil for frying
Directions:
Preheat a cast iron skillet to medium heat.
2. Mix coconut flour, arrowroot powder, sea salt, ground mustard, and pepper together in one bowl.
3. In a separate bowl beat egg with coconut milk.
4. When skillet is warm add a large dollop of coconut oil and begin dredging the turkey.
5. Form a small patty with the turkey, coat in the egg mixture, dredge in the flour mixture and then add to skillet. 6. Repeat.
It will take the nuggets approximately 3-5 mins to cook on each side.
