Ingredients:
1 spaghetti squash
10 basil leaves, chiffonaded
1C sun-dried tomatoes, chopped
4oz feta cheese, crumbled
Dressing
2T EVOO
2tsp balsamic vinegar
S & P to taste
Directions:
Preheat oven to 400. Line a baking sheet with parchment paper.
Cut squash in half, remove seeds, and place face down on baking sheet.
Roast 20 min or until flesh is easily pierced with fork.
Scrape out squash into large bowl.Top with basil, sun-dried tomatoes, & feta.
Whisk together dressing ingredients and pour over squash. Toss and serve warm.
