Ingredients:
2 lbs. cubed pork
1 pkg posole (rinsed)
1 lg onion, diced
1 (14 oz) can Hatch Red Enchilada Sauce
1 (32oz) can chicken broth
1/2 tsp garlic powder
cajun seasoning
Directions:
Brown meat in oil and lightly season with cajun seasoning.
Put aside and cook onion until tender.
Combine all ingredients. Simmer on low 2 1/2 - 3 hrs.
Season with cajun seasoning as desired. Add water if needed.
