Buttermilk Onion Rings

Ingredients:
3C buttermilk
1C flour, plus 3/4 C for dredging
1Lg white onion
4C vegetable oil for frying
salt & pepper
Directions:
Whisk together buttermilk and 1C flour.
Slice onion into slices 1/2 in thick. Separate into rings
Put the 14 largest rings in bowl and trun to coat evenly with butter milk mixture. Cover and refridgerate for 2 - 12 hrs.
Pour oil into heavy deep pot and heat until 350.
Spread 3/4 C flour on plate and season with salt and pepper.
Lift rings from buttermilk and dip into flour to coat evenly. Fry 2 - 3 minutes or until golden (2 or three at a time).
Drain on paper towels, season with salt and pepper.
