Recipe Name:Salmon with Asian Glaze

Ingredients:MARINADE
Juice of 1 orange
3T rice-wine vinegar
2T soy sauce
2T olive oil
1 small green chile pepper thinly sliced
1T grated ginger

4 6oz salmon filets
S & P
2 tsp olive oil
2T fresh cilantro
Directions:Combine marinade ingredients. Add salmon and turn to coat. Marinate 30 minutes in fridge.
Remove salmon (reserve marinade). Sprinkle iwth S & P. Heat oil in large skillet over med-hi heat. Cook skin side down 3-4 minutes. Turn over and cook 3-4 min more until just opaque in center. Remove salmon to platter and cover with foil to keep warm.
Add marinade int oskillet and cook over med-low 2-3 min utnil thick and syrupy. Drizzle over salmon and sprinkle with cilantro.
