Recipe Name:Chocolate Cranberry Cookies (GF)

Ingredients:2 oz. (2 squares) unsweetened chocolate
1/4 C butter
1 C sugar
2 1/2 tsp. vanilla
2 eggs
1C GF Flour
1 1/4tsp xanthan gum
2T cornstarch
1T baking powder
1/2 tsp salt
1/2C semi sweet choc chips
1/2C dried cranberries (or cherries)
1/2 C powdered sugar
Directions:In a med saucepan melt chocolate and butter (or microwave). Whisk in sugar and vanilla. Whisk in eggs one at a time.
In a large bowl, sift together flour blend, xantham gum, cornstarch, baking powder and salt. Stir in chocolate mix with rubber spatula. Stir in chocolate chips & cranberries.
Refrigerate dough for 2 hours.
Preheat oven to 350. Grease baking sheets.
Roll dough into 1 in. balls. Roll in powdered sugar to coat. Place dough 2 inches apart on prepared sheets and bake for 12 minutes. Cool 2 minutes on sheets before transferring to cooling rack.
