| Directions: | Preheat oven to 250.
Line baking sheet with parchment paper and trace out a 7in circle.
Dunk eggs in hot water for 30 seconds. Dry off shells. Separate eggs and use only whites. Beat whites until frothy add cream of tartar. Beat until soft peaks. Add sweetner and beat until stiff. Beat in vanilla and vinegar.
Work quickly and spread batter in a circle mounding whites up and leave a slight depression in center. Bake 1 hr. to 1hr. 15min.
Turn heat off, crack oven door and let cool in oven. Remove from oven and store in airtight container.
