Ingredients:3/4 C light coconut milk
2T peanut butter (Creamy)
1T red curry paste
1 tsp grated ginger
1 1/2 lb. boneless chicken thighs
2 red bell peppers, sliced
1 large onion, sliced
Directions:Combine coconut milk, peanut butter, curry paste and ginger in crockpot. Mix in chicken, peppers, and onion.
Cook on low 5 - 6 hrs.
