Recipe Name:Creamy Chicken and Rice Soup

Ingredients:4 strips bacon, chopped
1 1/2T butter
2 med carrots, sliced
2 ribs celery, sliced
1 med onion, diced
1/2 tsp dried thyme
S & P to taste
1 bay leaf
6C chicken broth
2/3C wild rice
2C cooked chicken
1/4C GF flour (or tapioca starch)
2C half/half or cream
OPT: Green chile
Directions:In a large dutch oven, cook bacon until crisp. With slotted spoon, remove bacon and set aside. Add butter to bacon fat and melt.
Add carrots, celery, onion, thyme and cook until start to soften. Stir in bay leaf, broth, and rice. Bring to a boil. Cover and simmer 35 min or until rice is tender.

Stir in chicken and continue cooking uncovered 5min. Whisk flour/cream together and add to pot. Cook until thickened Adjust seasonings. Add bacon and serve!
