Recipe Name:Cauliflower Risotto

Ingredients:2T EVOO
1 yellow onion, finely chopped
2 cloves garlic, minced
1 head cauliflower, riced (in food processor)
1/4C white wine
3/4 vegetable stock
3T plain greek yogurt
1/3C parmesean cheese, grated
1/4 pine nuts, toasted
2T parsley, for garnish (optional)
Directions:Heat EVOO in large skillet. Saute onion until transluscent (3 min). Add cauliflower and garlic. Season with salt and pepper. Stir occaisionally and cook for 5 min. Add wine and cook stirring up any brown bits, until liquid is reduced by half. Slowly add stock stirring constantly until completely absorbed. Remove from heat and stir in yogurt, cheese and pine nuts. Garnish with parsely.
