Ingredients:16 oz. frozen riced cauliflower
1 cup peas
1/2c sliced almonds
2T EVOO
2 cloves garlic, minced/pressed
pinch of red pepper flake (optional)
salt & pepper
1/3C fresh parsley chopped
1T lemon juice
Directions:Toast almonds in large skillet - remove and let cool in a bowl
Return skillet to heat and add EVOO & garlic. Cook until garlic is fragrant (30 seconds)
Add cauliflower, salt & pepper
Cook and stir until golden in places (10 min)
At 8 minutes, stir in peas.
Remove from heat and toss with almonds, parsley and lemon juice. Serve warm.
