| Directions: | Whisk dry ingredients in a large bowl.
Create a well in the center of the flour mixture, then add eggs.
Using dough hook to slowly incorporate the flour, until the dough is ready to be kneaded by hand.
Transfer the dough to a large work area dusted with tapioca starch and knead the dough until it is smooth (3-5 min). If the dough is sticky, sprinkle in a bit of tapioca starch.
Roll the dough into a ball, divide into 6 pieces. Run each piece through pasta maker moving from setting 1 - 4.
Bring a large pot of salted water with a little EVOO to a boil and drop in the fresh pasta strips. Boil 90 seconds.
