Ingredients:1/2C lemon juice
3T olive oil, divided
1/2C flour
2 eggs
1 tsp garlic powder
3/4tsp salt
2C panko
1/3Cplus 2T grated parmesean, divided
8 thin boneless/skinless chicken breast cutlets (2 - 3 oz each)
2T fresh lemon juice
1C marinara
4oz mozzarella cheese (do not use fresh), grated
chopped parsley for garnish
Directions:Arrange top oven rack 6 in from broiler. Heat oven to 450.
Rub large rimmed baking sheet with 1T oil. Put lemon juice in a bowl. Place flour in second shallow bowl. In third shallow bowl, beat together eggs, garlic, 2T water, and salt. In fourth bowl, combine panko with 1/3C parmesan and toss with remaining 2T of oil.
Toss chicken in lemon juice. Dip chicken in flour, then egg mixture (letting excess drip off), then panko mixture, patting to help adhere.
Transfer to prepared baking sheet. Roast until chicken is golden and cooked through 12 - 18 min
Heat broiler. Spoon marinara over chicken and sprinkle with mozzarella and remaining 2T parmesan.
Broil on top rack until cheese is melted and a little golden in spots 3 - 4 min.
