| Directions: | Preheat oven to 425
In foil pan, combine zucchini, bell pepper & garlic salt & pepper (to taste), 2tsp olive oil.
Bake uncovered 10 min.
Push veggies to one side of tray. Pat chicken dry and place in empty side of tray.
Top chicken evenly with tomato pesto. Bake uncovered until chicken reaches 165 degree (20 - 25 min)
Mix parmesean and cracker crumbs - set aside.
When chicken is done, top chicken with mozzarella & veggies with cracker crumb mixture. Bake again until cheese is melted 3 - 5 min.
Rest 3 minutes. Then top chicken with basil pesto. |
