| Directions: | Prepare pancakes. Mix all pancake ingredients and ladle 1/4C onto hot griddle. Cook until bubbly and flip (3min per side). Set aside to cool.
Cut each pancake in half. Lightly grease 11x7 baking dish with cooking spray. Stand pancake halves, cut side down in 3 rows, staring at one short end of baking dish, filling dish completely. (Pancake edges may overlap slightly).
Whisk together milk, eggs, vanilla, cinnamon, and 1/4C syrup. Pour mixture over pancakes. Cover and refrigerate 8hrs or overnight.
Preheat oven to 350. Uncover casserole, top with evenly with blueberries - sticking some between pancakes. Bake in preheated oven until center is set 50-55 min. Let stand 5 min. Serve with maple syrup. |
