Ingredients:5 lb. rib roast (or larger)
Salt (approx. 1 tsp. per pound)

Herbed Butter Rub
1T unsalted butter
1 T fresh rosemary
1 T fresh Thyme
5 cloves garlic (minced)

Pecan wood
Directions:24 hrs. prior to cook...
tie roast with twine
rub roast with light coating of salt (1 tsp. per pound) and place fat cap up on wire rack in sheet pan in refrigerator

1 - 2 hrs. prior to cook...
Place roast on counter to bring to room temp
Let butter soften on counter

Immediately before....
Mash together unsalted butter, herbs and garlic
Smear entire roast with butter mixture

Place DRY/empty drip pan under racks
Bring Kamado to 350/use handful of pecan wood for light smoke
Hold temp at 350
Place roast bone side down on racks and cook approx. 15 min/ lb. or until internal temp is min 120 (125 preferred).

Let rest 30 min
Remove side bones before slicing
