Ingredients:2 c diced peeled potatoes
2c water
1/2 c sliced carrot
1/4 c chopped onion
1/4 c butter, cubed
1/4 all-purpose flour
2c milk
1/4 tsp salt
1/4 tsp pepper
2c shredded cheddar cheese (8oz)
1 1/2 c cubed fully cooked ham
1c fozen peas, thawed
Directions:In a large sauce pan, combine potatoes, water, carrot and onion. Bring to a boil, cover and simmer 10-15 minutes until tender.

In another saucepan, melt butter. Stir in flour unitl smooth. Gradually add milk , salt and pepper. Brink to a boil; cook and stir for 2 min or until thickened. Stir in cheese until melted. Stir into undrained potato mixture. Add ham and peas; heat through.
