Coq au Vin

Ingredients:
3 slices bacon, cut crosswise into 3/4 in pieces
1 pkg mushrooms (10oz), halved
2C frozen pearl onions
1 cut up chicken (3-4lb) skin removed
S & P
1 med onion chopped
1 lg carrot chopped
4 cloves garlic, chopped
1C dry red wine
2T tomato paste
1 bay leaf
3/4 C chicken broth
Directions:
In a skillet cook bacon until browned. With slotted spoon transfer to plate to drain.
Put pearl onions and mushrooms in slow cooker
Sprinkle chicken pieces with S & P. Cook in bacon fat utnil browned (10 min).
Place chicken over veggies in slow cooker.
Discard drippings from skillet. Reduce heat to med. Add onion and carrot and cook 2 min stirring frequently.
STir in garlic and cook 1 min. Add wine, tomato paste, bay leaf. heat to boil stir to dissolve tomato paste.
Pour mixture over chicken pieces in slow cooker.
Cook on low 8 hours.
