English Muffins (Paleo)

Ingredients:
1/4 C (half stick) butter, melted
1/3 C coconut flour
4 eggs
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/4 tsp baking powder
1/2 C - 3/4 C grated sharp cheddar cheese
Directions:
Preheat oven to 400.
Beat together eggs, butter, salt, pepper, and garlic powder. Add coconut flour and baking powder. Mix until no lumps. Spoon batter into 5 greased ramekins. Bake 15 minutes or until firm. Cool completely. For best results, make the night before you plan to eat and store in fridge.

SWEET VARIATION:
omit garlic powder, pepper and cheddar cheese. Sub 1 tsp vanilla extract and 1/2 C mozerella cheese.
