Ingredients:
1 1/4 sticks butter
4 oz. cream cheese
10 eggs
3-4 T honey
1 tsp salt
2T vanila
2C whole milk yogurt
1 tsp lemon zest
3/4 C water
2 tsp baking powder
1 tsp stevia
2C coconut flour, sifted
Directions:
Preheat oven to 325
Grease 9 x 5 in loaf pan, with bottom of pan lined with a cut piece of parchment.
Mix dry ingredients. In stand mixer, cream butter and cream cheese together. Beat in sweetners until light and fluffy. Mix in eggs, and alternately add wet & dry ingredients (except lemon zest). When combined, add zest. Pour into loaf pan almost to brim. If you have batter left over, you can bake in a mini pan.
Bake 90 minutes, covering with foil after the first 30 minutes if the top is golden. Bake until toothpick inserted comes out clean. Let cake cool for 2 hrs (preferably overnight in pan). Cake will taste better the next day.
