| Directions: | Preheat oven to 325
Grease 9 x 5 in loaf pan, with bottom of pan lined with a cut piece of parchment.
Mix dry ingredients. In stand mixer, cream butter and cream cheese together. Beat in sweetners until light and fluffy. Mix in eggs, and alternately add wet & dry ingredients (except lemon zest). When combined, add zest. Pour into loaf pan almost to brim. If you have batter left over, you can bake in a mini pan.
Bake 90 minutes, covering with foil after the first 30 minutes if the top is golden. Bake until toothpick inserted comes out clean. Let cake cool for 2 hrs (preferably overnight in pan). Cake will taste better the next day. |
