Steak Chile Rellenos

Ingredients:
6-8 large fresh green chiles
2T coconut oil
1/2 red onion, diced
1 lb. tri tip cut into small pieces
1/2T cumin
1T dried oregano
1T chili powder
S & P to taste
1 red bell pepper, diced
1 bunch of kale, chopped
4 garlic cloves, minced
2 Roma tomatoes, diced
1 4oz can green chiles
1C salsa verde

Directions:
Preheat oven to 500.
Bake chiles on foil lined baking sheet for 10 minutes (until blistered)
In a large skillet, add coconut oil and saute onions for 2 min.
Add steak and saute until meat browns
Add spices to onion and meat mixture.
Add remaining ingredients, except salsa, and cook until greens are tender.
Cut a slit down middle of chile lengthwise.
Remove seeds and heart with spoon and place chiles in glass baking dish.
Stuff each chile with meat mixture.
Bake in375 oven for 15 min.
Top each chile with salsa verde.
