Spatchcock Chicken/Hens
Brush poultry with EVOO and season with S & P.
Prepare Kamado Joe: Use heat deflectors and cherry wood
(Cornish Hens) - Cook at 275 degrees until internal temp reaches 135 degrees (about an hour)
Baste with marinade & raise grill temp to 325.
Cook until internal temp of 165-170 degrees.
**Brush marinade on during last few minutes of cooking time (Orange juice and/or honey will burn).
